A simple, budget friendly, versatile and quick curry recipe to prepare and make dinner in no time with a rich and delicious taste. In this recipe I used chickpeas but i love the variety of dishes you can make with this sauce as base. I use the same recipe to make chicken curry from chicken leftovers, fresh chicken breast is perfect too or with white beans, which is a staple food I have either in my pantry, cans, or homemade in the fridge. You can also make a vegetarian dish with cauliflower or bell peppers.
This is the kind of food you want to have on your menu repertory either because you want to eat a real home cooked meal done in less time or you have friends over and they stay for dinner. This recipe is a sure card to use as long as you have your staples as tinned tomatoes, canned legumes or frozen veggies. It is a light recipe and a great add to a diet plan.

Fragrant Tomato Curry Sauce for Delicious Healthy Stews
Fragrant Chickpea Tomato Curry Stew |
Ingredients
3 -4 serves
25-30 minutes prep
1 onion medium-sized
4 medium- sized tomatoes +1 tbsp tomato paste or use tinned tomatoes
1 tbsp tomato paste
2 garlic cloves,
1 tsp ginger powder or 1 inch 2,5 cm shredded fresh ginger (optional)
1 tsp turmeric
1 tsp red chili flakes (optional)
1/2-1 tsp cumin powder
1/2-1 tsp curry powder or garam masala
2 bay leaves
1/2 tsp brown sugar (for best taste)
2 tsp olive oil
Salt to taste
1 -1,5 cup water or stock or 200 -300 ml
options of main ingredient
2 cans chickpeas or beans about
chicken leftovers, shredded or 2 fresh chicken breast file thinly sliced + green bell peppers
2 bell peppers or a small cauliflower in pieces + veggies you like
roughly chopped coriander or parsley for garnish (optional)
How to
Grate the tomatoes if you use fresh and keep aside.
Chop onion and the garlic cloves.
Heat oil in a pan add the chopped onions, garlic and the sugar .Sauté till onions is transparent. (if you use bell peppers add those too)
Add the dry spices except the red chili flakes and stir a minute to bring out the fragrance and taste of the spices.
If you use fresh ginger then add the fresh grated and stir around a couple times.
Then add the grated tomatoes or the tomato paste along with salt, red chili powder,
Add 1.5 cups of water and let the curry sauce boil for 10 minutes.
Then add the chickpeas or your main choice and let everything simmer for another 10 minutes on medium heat or until the sauce thickens to the desired consistency.
Serve with a click of plain yogurt sauce if you like, adds freshness specially when mixed with grated cucumber and a pinch of salt. And cooked rice!
