Egg Plate with Cheese & Greens Recipe


I love food plate dishes there is so much one can do, you can make the simplest of food to look luxurious!  You have maybe seen one of my banners which says;

Simplicity+Smart Choices=Geniality= Good Results 

That is what food plate dishes are to me, a creativity field full of possibilities to create magic, I know I like that word but it is a very suitable word when it comes to plates. 

In this post I will take the most simple food and serve a colourful well balanced meal. The dish is perfect to serve as brunch or lunch. It is also an easy dish to prepare the evening before in a lunchbox to work or for the kids lunchbox. Add crispbread and a fruit for a more filling meal.

Egg Plate with Cheese & Greens

 Egg Plate with Cheese & Greens Recipe

Ingredients
2 serves

4 large eggs
4 slices cheese 
8 romaine salad leaves 
12 cherry tomatoes
1 english cucumber
a handful parsley
salt, pepper to taste
squeeze a few drops of lemon (optional) 

How to:
I like my eggs to be semi-boiled but you can have hard boiled eggs as well for this plate. 
For semi-boiled eggs bring water to fast boil with salt and softly with a spoon dip the eggs slowly to the bottom of the saucepan. Boil the eggs for 7 1/2 minutes, if you want hard-boiled it,s 10 minutes.
When ready pour out the hot water and add cold to stop the cooking process. Let the eggs cool down before you peeling off the eggshell.
Wash all the greens thoroughly, best is if you can wash and then leave the greens in the water for a half hour to get rid of pesticides. 
Then go on and get creative and make your plate or make my arrangement.


Good to know is that if you have hard boiled eggs you reduce the calories and it's preferable when you are on diet and for the same reason you can use a lower fat cheese but read the labels as you don't want other adds in the cheese because of that! Adding lemon is also preferable for a healthier meal if you like.
