My New Year Favorite Food/ Sandwich cake & yummies

CHEERS & HAPPY NEW YEAR!!!

It's time again for the last big party of one more year, the good bye of the past year and the welcome of the New Year! Symbolic and grandiose with all the rituals that's created around the big event. 

And we need to have rituals and mark occasions which can help us to make a closure to what we need to leave behind which no longer serve our goals and start with new spirit, fresh mind, renewed strength, knowing that we do have all the possibilities to make true what ever we want to achieve. 

Over to food for the New Years Eve, it's always a couple of foods I don't want to be without at the time and that is cured or smoked salmon, preferably both  and shrimps.  I love buffet as it makes it possible for me to gather and have fun with guests, and this food is perfect for that. I  serve either on trails on salad leafs decorated with dill and lemon slices, how easy isn't that or I make shrimp salad and seafood sandwich cake. I can tell you I'm  a queen in making sandwich cakes and decorate them they are delicious feast food and a sandwich cake is a most have in my New Years party! :)


Enough talking, I will share this ideas with you that I found to be best and hope you will love them. The shrimp salad/cocktail have an Asian touch with lime, mango and coriander and can be served as here in cocktail glasses for a more festive feeling.



Shrimp salad /cocktail  
4 serves, easy to double ;)
300 g peeled shrimp
2 mangoes
2 avocados
1 red onion
1 piece lime
1 red chilli (optional)
1 st parsley or coriander
1 tablespoon cold pressed olive oil

How to:
1. Cut the mango and avocado into chunks . Finely chop the red onion . Mix the mango, avocado , onion and shrimp in a bowl.
2. Squeeze in lime , add chilli, coriander and olive oil. Stir and season with salt.


Salmon Sandwich Cake



9 slices of bread
  (8 serves)

filling
3 eggs , hard-boiled
350 g craw fish tails , peeled ( drain if they are in the team)
100 ml mayonnaise
100 ml cup sour cream
1/4 red onion finely chopped
1 piece of lemon
100 gr dill , chopped
salt and black pepper

Decorating Crème
2 cups sour cream
0.5 ml of mayonnaise

garnish
200 grams smoked salmon
lemon
dill
lettuce leaves

How to
1. Place 3 slices of bread on a tray or dish. Cut out a circle with a plate as a template. Do the same with the other breads , so you have three round bottoms.
2. Chop the eggs and crayfish tails . Mix mayonnaise, sour cream , onion, lemon juice with the lemon peel and dill. Mix in eggs and crawfish and season with salt and pepper.
3. Spread half of the crab mixture on the first layer . Add next layer of bread on top of that and spread the rest of the crab mixture. then add the last layer bread .
4. Mix together the ingredients for the garnish cream and spread over the cake. Wrap and cooling for some hours , preferably overnight .
5. Before serving , garnish the cake with salmon , lemon, dill and lettuce .

Units= 100 ml = 0.4 cup (US)

Tip
The crayfish can be exchanged with shrimps and the cake is more flavorful when made the day before but do the garnish just a few hours before serving to keep a fresh look. 
You can easy make twice the size, just double and place the bread slices straight and create a square or rectangular shape!
