Green & Tangerine Cranbery Salad

The wonderful art of cooking is loved by many and creates togetherness, warmth and memories! Let us create memorable moments with great tasty food that nourishes our body soul and waistline, enjoying many years with good moments creating vital body's adding vital food to our diet. That's what my first dish I share will be about. Health, vitality and good taste! 


First plate out is a "Green & Tangerine Cranberry Salad". You can substitute with your favourite lettuce, add spinach or walnuts and experiment with vinaigrette's but keep in mind as you add more oil it will increase the calories.  Good fats is never a problem and needed for a healthy you when used in moderation.  The gorgeous cranberries add such beautiful colour so don't limit their taste and loveliness to sauce.  For this recipe I made a light vinaigrette to keep more freshness and taste!  

This salad is as most salads great to boost your health and help you keep your waistline lean! It is a low carb and low fat dish which can be more fulfilling and nutritious to enjoy as a meal by adding boiled chicken breast pieces or remains from other poultry dishes.  I love to have a mustard vinaigrette for poultry salads, gives more go to the whole dish, delicious!!!


Green & Tangerine Cranberry Salad

Ingredients
2 heads lettuce about 2 c or 500 g romaine and batavia
1 small or 1/2 shallot finely chopped
4-6 tangerines
4 tbsp pumpkin seeds 
1/3 c or 76 g dried cranberries 
1 tbsp extra virgin olive oil 
1/4  orange, squeeze the juice
1/4 - 1/4 lemon, squeeze the juice
salt to taste and a touch of pepper

Directions
1. Wash the lettuce well and cut in big pieces preferably by hand.
2. Stir shallots together with the juice of the orange, lemon, salt and pepper. Whisk in oil.
3. Toss the lettuce with vinaigrette add tangerines and sprinkle with cranberries and        pumpkin seeds.

Enjoy the salad as a side or a main light lunch and even dinner with chicken or turkey and a mustard vinaigrette. Delicious any time, easy to make and perfect to have on festive occasions.





I love food and I like to cook and eat.  As we also eat with our eyes it has to be delectable and colourful. Colourful also means we have to use vital ingredients and important for a nutritious meal is to have variety. Raw food as salads and fruits provide the best of the antioxidants, vitamins, minerals we need to keep us well and add the extra touch for a more fun eating pleasure! Salads and fruits are the beauty's on our table and are also the creators of a beautiful You!
